Sweet Elderflower Fritters
Fragrant and Fluffy Fritters
What’s not to love about a cheeky little early morning forage? This recipe is great for a sweet treat or pudding. The batter is light and fluffy and is a really nice early summer treat.
Ingredients
12 Elderflower heads
100g Self-raising flour
Oil for frying
2tsp Cornflour
1 Egg
150ml Sparkling water
1 - 2tsp Caster sugar
A pinch of salt
Icing sugar for dusting and a wedge of lemon
Method
Whisk egg, flours and sugar together then add sparkling water. This helps lighten the batter.Heat oil in a saucepan until very hot.
Dip each flowerhead into the batter and fry for 30 seconds.
Remove with a slotted spoon and dry on kitchen paper. Dust with icing sugar, small squeeze of lemon and eat while crunchy.
